Turkish-inspired
Ingredients
- 2–3 Turkish flatbreads (from Green Lanes)
- Knob of butter or EVOO
- Pinch of pul biber
- Pinch of cumin
- Pinch of salt
Method
- Melt butter or EVOO with pul biber + cumin + salt
- Brush over flatbread generously
- Under grill or in dry pan for 2–3 mins until bubbling and slightly charred at edges
- Cut into strips, serve immediately
Key Details
- Serve immediately, it loses its magic after a few minutes
- The Turkish answer to garlic bread, and it’s better
- The pul biber in fat blooms and becomes fragrant, don’t skip
Variations
- Add a smashed garlic clove to the melting butter for a garlic version
- Za’atar brushed on instead of the spice butter, simpler, equally good
- Finish with a pinch of sumac after grilling for brightness

- Confit chillies in oil (mop up the oil)
- Any mezze spread as the base
